Spicy Rockin’ Red Cabbage

Red cabbage has plenty of health benefits. Packed with vitamins A, C and K, it is also full of antioxidants. But just because cabbage is healthy doesn’t mean it has to be boring. This spicy red cabbage recipe rocks! And it’s super easy. All you need to do is throw the ingredients into a single pot and heat.
Makes 6 servings

1 ½ lbs. red cabbage, shredded
2 medium onions, chopped
1 tart apple, cored, peeled and chopped
1 cup pitted prunes
1 garlic clove, crushed
1 tsp. ground cinnamon
¼ tsp. ground cloves
1 tsp. cumin seed
1 tsp. coriander seed
2 Tbsp. red wine vinegar
ground nutmeg, to taste
½ cup water

1. Place all ingredients in a soup pot. Mix thoroughly.
2. Cover pot and cook over medium heat, stirring often. Add water occasionally, so cabbage doesn’t dry out. Cook about 1 hour or until veggies are tender.
3. When done, transfer to a serving bowl. Cabbage may be served warm or cool.
